Pains au lait


INGREDIENTS

  • 75g soft butter
  • 1 tsp salt
  • 75g sugar
  • 2 eggs
  • 230g (22 cl) milk
  • 24 g fresh baker's yeast
  • 530 g flour

STEPS
              STEP 1 :
              spill the flour, sugar, salt, yeast, eggs and milk at room temperature in a mixer bowl. Knead for 4-5 minutes. One obtains a texture close to that of bread.
              2ND STEP :
              Add the softened butter and stir it into the dough. Place the dough on the floured surface and shape into a ball. Place it in a bowl. Cover with plastic wrap or a dish towel and let rest in the hottest part of the piece 1 to 2 hours. The dough should double in volume.
              STEP 3:
              Fold the dough for degassing and cut the portion of about 40g each boulez you. You can either make round buns either oval shuttle. Place the rolls on a baking sheet lined with parchment paper. Cover and let rest again about an hour in the hottest part of the room. They should double in volume.
              STEP 4:
              With a beaten egg omelette, bask rolls then cut them on top with a chisel. This will allow the steam to escape and buns better swell.
              STEP 5:
              Preheat oven to 180 ° C or gas mark 6.
              STEP 6:
              Bake the scones for 13 to 16 minutes. When they are cooked, they are golden brown and sound hollow.
